
Carrot Apple Salad
1 diced apple, no need to peel
1 cup shredded carrots (buy already shredded and save time)
1/4 cup golden raisins
1/4 cup shredded coconut
Dressing
1/4 cup mayo
1/4 cup plain Greek yogurt
2 tablespoons vanilla extract
Juice of one lemon
Make the dressing and set aside.
Dice apple and add to bowl with the carrots, raisins and coconut. Pour the dressing over and mix.
Chill and serve!
Makes 4 servings.
