Waldorf Salad two ways

Fresh salads with fruit are so refreshing on a hot summer day. My mother was a big fan of classic Waldorf Salad and made it frequently. We like it, too, but we also like the updated version. What determines which one I make depends on the ingredients in the pantry. 

And don't be afraid to mix up the ingredients. If you don't like raisins, try cranberries in the classic. Or walnuts in the updated version. Or use grapes of all colors! Both recipes can be expanded without strictly doubling. Just add more of what you really like and enjoy. 


Classic Waldorf Salad

1/2 cup Mayonnaise (whatever brand you prefer)
 1 Tablespoon sugar.
 1 Tablespoon lemon juice
1/8 teaspoon salt
3 red delicious apples, cored and diced
1 cup thinly sliced celery
1/4 cup raisins (optional, or try grapes)
1/2 cup chopped walnuts.

Directions

1. In a large mixing bowl, add the ingredients and mix well. Cover and chill until time to serve, at least two hours. 

OR

The classic recipe updated.

Ingredients
  • 1 cup diced celery
  • 1 cup diced Red Delicious apple
  • 1 cup dried cranberries
  • ½ cup chopped pecans
  • 1 - 6 oz. container plain Greek-style yogurt
  • 1/8 teaspoon cinnamon (a dash)

Directions

1. In a large mixing bowl, add yogurt, cranberries and cinnamon. Blend well. (Do this first to incorporate the cinnamon equally.)

2. Dice and measure celery, apple and pecans.  Fold into to yogurt mixture and chill covered until time to serve, at least two hours.
